A long journey that began on Khalig al-Masri Street, leading to the historic “Souq al-Garaya” in Bab al-Shariya before its demolition, where the name was forged, the flavor endured, and the saga continued.

Upholding this heritage today are the brothers: Wael Gouda Al-Toukhi (the eldest brother, Mohammed, and Ayman. They carry the weight of a name built by their fathers and grandfathers, having learned from childhood that this craft is not merely a job, but a way of life.

The story traces back to a very distant time, specifically to 1890. At that time, my grandfather worked as a Fatatri (pie maker) on Khalig al-Masri Street, which was one of the most prominent old streets of Cairo before it was eventually demolished.

But the story didn’t end there; it moved and evolved until it settled in “Souq al-Garaya” in the Bab al-Shariya district before its removal.

We were born into this craft; we found our grandfather, father, and the whole family immersed in it. It wasn’t just a beginning; it was a natural extension of an entire life.

Was this profession a matter of inheritance or passion?

It is truly both, but the passion came from immersion. We started working at a very young age—around seven years old. We would watch first, then assist, until we became part of the place.

We witnessed our father’s toil and devotion; we saw how this craft provided for us and protected our home. We grew up attached to it organically, a legacy that is preserved today by our eldest brother, Wael, along with all the brothers.

When did the move to the current Bab al-Shariya location happen? And why?

After the old sites and Souq al-Garaya were demolished, we had to find a place to continue our journey. We settled in the heart of Bab al-Shariya, specifically on Sheikh al-Arousi Street

. This area was incredibly vibrant, home to people from all walks of life—the wealthy and the poor, Egyptians and foreigners alike.

This helped the name spread far and wide. We have been here for decades, and the shop has become a landmark of the district; people now inextricably link us to the spirit of the neighborhood.
